Purslane: Nutritional Benefits, Stomach Health and How to Prepare This Remarkable Green Vegetable

Purslane (Portulaca oleracea) is a low-growing, succulent leafy plant that many people regard simply as a weed. Method 1: Cooked Purslane with Onion and Tomato

  • Fresh purslane
  • 1 onion
  • 1–2 tomatoes
  • A small amount of cooking oil
  • Salt to taste

Preparation

  1. Select fresh, healthy purslane.
  2. Remove roots, damaged leaves and any tough portions.
  3. Wash the plant thoroughly several times in clean water.
  4. Chop the tender stems and leaves.
